Thandai Mousse

Ingredients

  • 1 cup full cream milk
  • 2 spoon Thandai Syrup
  • 1/2 cup whipping cream
  • 1 spoon gelatin
  • 1 cup Castor sugar
  • 1/2 cup chopped dry fruits
  • 5-6 dried rose petals for garnish

Instructions

Step 1: Prepare Thandai Milk

  • Take 1 cup full cream milk in a pan and add 2–3 tbsp thandai syrup or powder and mix well.
    In a pan, take 1 cup full-cream milk and mix in 2–3 tablespoons of thandai syrup or powder until well combined.

Step 2: Cool the Milk

  • Heat the milk lightly, turn off the gas and let it cool completely so that the texture of the mousse is correct.

Step 3: Soak Gelatin

  • Soak 1 tsp gelatin in 6 tsp water for 5 minutes.
    Soak 1 teaspoon gelatin in 2 tablespoons of water for about 5 minutes.

Step 4: Add Gelatin to Thandai

  • Lightly heat the soaked gelatin to make it liquid and mix it in cold Thandai milk.

Step 5: Prepare Whipped Cream

  • Take 1 cup whipping cream in a cold bowl and whip until soft peaks form.
    In a chilled bowl, whip 1 cup whipping cream until soft peaks form.

Step 6: Make Mousse Mixture

  • Gradually fold the cooled milk mixture into the whipped cream so that the mixture remains light and fluffy.

Step 7: Serve in glasses

  • Pour the prepared mixture into a serving glass or bowl and garnish with almonds, pistachios and rose petals.

some additional tips
  • While making Thandai Mousse, first grind the Thandai paste finely so that the texture of the mousse becomes smooth and creamy and does not appear grainy. For this, it is better to soak almonds and pistachios for some time first.
  • The cream used in mousse should be thoroughly cooled, only then it will be whipped properly and become fluffy and the mousse will appear light. Room temperature cream does not set the mousse.
  • Add powdered sugar or condensed milk instead of sugar, this helps the mixture dissolve quickly and does not form lumps. If the thandai is already sweet then mix it after balancing the sweetness.
  • To balance the flavor of thandai, do not use excessive quantity of saffron and cardamom, only light aroma makes the mousse rich. If you want, you can increase the festive taste by adding a little rose water.
  • Keep the mousse in the fridge for at least 2-3 hours to set; if you take it out too soon, it will not get the right consistency.
  • Before serving, garnish with dry fruits or saffron, this will enhance the taste as well as the look.
  • If you want a light and airy texture, then slowly fold the thandai mixture into the cream, mixing too quickly will expel air and make the mousse heavy.
  • Use small glasses or earthen kulhads to serve, this increases its festive feel and makes it enjoyable to eat cold.
