Paneer Lababdar Recipe: On the auspicious occasion of Eid, the splendor of Dastarkhwan increases with biryani and kebabs, but for vegetarian guests, there is nothing better than Paneer Lababdar. Its thick and velvety gravy prepared with tomatoes, cashew nuts and cream will add a new flavor to the festive cheer.
Preparations for the celebration of Eid 2026 are in full swing. The real fun of Eid feast comes when there is variety on the table. Often we make simple paneer curry, but this time you can surprise everyone by making paneer lababdar. The meaning of Lababdar is to surrender oneself completely, i.e. a dish in which cheese and spices mix together in such a way that the taste reaches straight to the heart.
The real secret of Paneer Lababdar
Tomato and onion alone are not enough to get hotel-like rich gravy. The real secret is the paste of cashew nuts and magaj (melon seeds). Soak both of these in hot water and grind them finely. This gives the gravy that royal texture that restaurants are famous for.
Method of preparation
- Heat some oil and butter in a pan. Add dry spices (bay leaves, cinnamon, cardamom) to it. Now add finely chopped onion and fry until it turns golden.
- Add ginger-garlic paste and then tomato puree. Now add turmeric, Kashmiri red chilli (for colour), and coriander powder. Cook it until the oil starts separating.
- Now add cashew and mango paste to it. Keep stirring it continuously so that it does not stick to the bottom. This is the time when you have to add a little grated cheese to the gravy. This makes the gravy even thicker and tastier.
- Finally add paneer cubes, kasoori methi and fresh cream. Add garam masala and cook on low flame for 2-3 minutes.
Pro-Tips
- Always soak paneer in hot water for 5 minutes, this keeps it very soft.
- Add a little sugar or honey to the gravy which will balance the sourness of the tomatoes.
Serve this Eid Paneer Lababdar with hot butter naan or sheermaal. This dish not only looks royal but is also delicious in taste. The guests coming to your house will go crazy about your cooking skills.
