Thick Curd Recipe: In the summer season, a plate of food seems incomplete unless there is cold and thick curd in it. Whether you want to make raita, drink lassi or enjoy it with parathas, curd is the first choice of every household. But often we forget to prepare curd at night and then have to run to the market in the morning. If you are also troubled by this problem then stop worrying now. We have brought for you such an instant trick by which you can prepare thick curd like pudding in just 15 minutes.
Viral trick of making curd
For this viral trick of making curd, you just have to take the help of pressure cooker in your kitchen. First of all, take half a liter of full cream milk and boil it for 3-4 minutes so that the excess water gets removed. When the milk remains lukewarm, add a little curd into it and mix well.
After this, pour the milk in an earthen pot or vessel and cover it well with aluminum foil. Now pour some water in a pressure cooker and place this pot inside it. Close the lid of the cooker but keep in mind that the whistle has to be removed. Keep it on low flame for 15 minutes. The gentle heat of the cooker greatly speeds up the curd setting process and creamy curd is ready within a few minutes.
Secret trick of clay pot and confectioner
Using an earthen pot to prepare thick curd is considered best. The soil absorbs water due to which the curd becomes curdled. A special way to get the halwa-like texture is that instead of adding the sourdough directly into the milk, first take two spoons of curd and a little milk in a bowl and whisk it well. By mixing this churned mixture with the remaining milk, the curd becomes completely creamy.
Be careful while setting curd
The quality of curd completely depends on the milk. Always use condensed milk or full cream milk. If you are using toned milk then after boiling it, cook it for additional 4-5 minutes on low flame so that it becomes thick. Another important tip is that after adding sourdough to the milk, do not seal it completely airtight. Allowing a little air to come in helps the cream to set better. You can cover it with a sieve and place a big plate on top.
Repeated use will reduce time
If you prepare curd again and again in the same earthen vessel then the time starts taking even less. It may take you a little more time the first time, but gradually the time for setting the curd in the same vessel will reduce to just one and a half to two hours. So next time you forget to prepare curd, try this magical cooker hack instead of going to the market.
