Aate Ki Laapsi
Flour Lapsi is a traditional and nutritious Indian sweet, which is especially prepared during festivals, prasad or special occasions. It is prepared by frying wheat flour in ghee, cooking it with jaggery or sugar and water/milk. Its taste and aroma are enhanced by adding cardamom and dry fruits to it. This dish is not only delicious but also full of energy.
- 1 cup wheat flour
- 3/4 cup milk or water
- 3-4 spoons ghee
- 4-5 spoons sugar or jaggery
- 1 teaspoon cardamom powder
- 1/2 cup chopped nuts (for garnishing)
Step 1: Fry flour in ghee

Put ghee in a pan and heat it on medium flame. Then add flour and fry while stirring continuously until golden and aromatic.

Step 2: Add milk

Slowly add milk or water to the roasted flour. Mix it well so that no lumps are formed and the batter remains smooth.

Step 3: Add Sweetener

Now add sugar or jaggery in it. If you are using jaggery, first dissolve it in some water. Mix well so that the sweetness dissolves completely in the lapsi.
Step 4: Add cardamom powder

Add cardamom powder for aroma and flavor to the Lapsi and mix gently.
Step 5: Add chopped nuts

Add chopped nuts (cashew nuts, almonds) and mix lightly. This makes Lapsi tasty and nutritious.

Step 6: Serve

Cook the Lapsi for 2-3 minutes more so that all the flavors mix well. Then serve hot.

- Fry the flour well, only then the Lapsi will smell good and taste better.
- Pay attention to the consistency of the batter – neither too thin, nor too thick.
- While mixing jaggery, there should not be any lumps, this makes Lapsi smooth.
- Adjust the ratio of milk and water as per your preference.
- Adding dry fruits and cardamom powder increases the taste and nutrition.
- While cooking Lapsi, keep stirring continuously, so that it does not stick to the bottom and gets cooked evenly.
- Serve by adding some ghee on top, this will enhance the taste even more.
- While preparing in winter, add heated milk, Lapsi becomes more warm and comfortable.
