New Delhi/Chandigarh Today, the festival of Baisakhi is being celebrated with great pomp throughout North India, especially in Punjab and Haryana, to mark the harvest of Rabi crop. Also, a unique confluence of tradition and taste is being seen on this festival.

Main dishes and regional specialties
Sweet Rice: Yellow color has special significance on Baisakhi. Today, ‘sweet rice’ prepared with saffron, cardamom and dry fruits is the main attraction in almost every household. This color is considered a symbol of prosperity and new harvest.
Mustard greens and corn bread: Despite being the main food of winter, on the occasion of Baisakhi, it is being served in the traditional way along with fresh produce from the fields. Along with this, the confluence of white butter and jaggery is doubling the taste of the food.
Chole-Bhatura and Puri-Chole: Nowadays mainly Bhandaras of Chole-Bhatura and Aloo-Puri are being organized in Gurudwaras and fairs. There is huge demand for these dishes in Baisakhi fairs.

Offering : ‘Kadah Prasad’ (wheat flour pudding) is being specially prepared and distributed in Gurudwaras. This prasad is made of pure desi ghee which has spiritual and cultural significance. Along with this, in view of the onset of summer, sweet lassi and sattu sherbet are also being consumed in large quantities today.
Market condition: Huge sales of Jalebi, Laddu and Pinni have been recorded at sweet shops today. Many restaurants have introduced special ‘Punjabi Thali’ on the occasion of Baisakhi, featuring traditional flavors served in a modern way.
Agricultural experts say that along with food, this festival also reflects the hard work of farmers and respect for the soil.
