FSSAI: The Food Safety and Standards Authority of India (FSSAI), the food safety body of the Government of India, has taken a strict stance on artificial ripening of fruits. In the instructions issued, it is clearly stated that ripening fruits using dangerous chemicals is completely illegal and strict action will be taken against those who do so. FSSAI has directed food safety officials of all states and union territories that the use of calcium carbide (known as ‘masala’ in the market) for ripening mango, banana, papaya and other fruits is completely banned.

The organization has warned that fruits cooked with calcium carbide are extremely dangerous for health. This can cause serious problems like difficulty in swallowing, vomiting, stomach pain and skin lesions. Actually, this chemical releases poisonous gas when it comes in contact with fruits, which is harmful for humans.
Strict rules regarding ethephon and ethylene also
FSSAI has also clarified in its notice that cooking fruits by immersing them directly in ethephon solution is illegal. Although limited and safe use of ethylene gas can be made, its direct contact with fruits (in powder or liquid form) is strictly prohibited.
Campaign will run in markets and warehouses
FSSAI has instructed the states to keep strict vigil on fruit markets, warehouses, wholesalers and distributors. Especially in the mango season, where there is a possibility of use of ‘masala’, a special campaign has been asked to be conducted. If use of calcium carbide, wax or fake color is found anywhere, immediate action will be taken. In such cases, a case can be filed under Section 59 of the FSS Act. FSSAI Executive Director Dr. Amit Sharma has said that strict legal action will be taken against those cooking fruits illegally. He said that this step has been taken keeping in mind the safety of people’s health. Now the quality of fruits sold in the market will be closely monitored, so that consumers can get safe and healthy fruits.
