Easy recipe to make rice kanji
Material
½ cup rice, 3–4 cups water, salt as per taste, ½ tsp cumin (roasted), 1–2 tsp curd (for fermentation)

Method of preparation
Wash the rice thoroughly and boil it in water until it becomes soft. When the rice is cooked, mash it lightly so that the starch comes out. Now dilute it by adding a little more water. Cover it and keep it aside for 6-8 hours or overnight to slightly ferment. Next morning, add salt and roasted cumin seeds and mix well. Cool and drink.
tips
1-If you want more sourness then ferment it for a little longer time.
2- To enhance the taste, you can also add mint or black salt in it.
3- Keeping it in the fridge and drinking it cold feels even more refreshing.
