Jau Ki Raabdi Recipe: Since the beginning of April, the weather of North India seemed to be playing a strange game – sometimes light rain, and sometimes sudden rising temperatures. But now the picture has become clear, summer has set in completely. The effect of heat wave will intensify in the coming days, due to which problems like dehydration, heatstroke and heat exhaustion may increase. In such a situation, it is not enough to just avoid the sun, but it also becomes very important to keep the body cool from inside. And this is where some special desi drinks come in handy, which help in providing relief from the heat. In this series, Food Safety and Standards Authority of India (FSSAI) has shared a traditional drink, Barley Rabri. This drink, consumed in Haryana and Rajasthan, is considered a reliable way to keep the body cool during summer. So let’s know its recipe.
Material
- 2–3 tbsp barley flour
- 2 cups water
- 1 cup buttermilk or curd
- salt as per taste
- little roasted cumin powder
method of making
- First mix the barley flour well by adding some water so that there are no lumps.
- Now heat water in a pan and add this solution in it.
- Cook on low flame while stirring continuously, until it thickens slightly.
- Leave it to cool.
- When it cools down, add buttermilk or curd and beat it well.
- Add salt and roasted cumin on top and mix.

When and how to drink?
- It is most beneficial to drink barley rabri in the afternoon, when the heat is at its peak.
- Drink it slightly chilled, avoid adding too much ice.
- You can also take it on an empty stomach, but if you have acidity problem then it would be better to drink it after food.
- Drinking 1–2 times a day is enough, avoid taking excessive amounts.

- Barley has a cooling effect, which helps in balancing the increased body temperature.
- The nutrients present in it keep the body hydrated and do not allow water shortage.
- By adding buttermilk or curd, this drink keeps the stomach calm and cool.
