New Delhi: President Droupadi Murmu received Vietnam’s President Tô Lâm at Rashtrapati Bhavan and hosted a grand banquet to honour him with an all-vegetarian menu. With the feast came a note mentioning, “In Punjab and Haryana, meals are served traditionally on ‘Thals’ with small bowls of curries, pickles, chutneys, rice and breads: a harmony of flavours and balance of nutrition.”
A delicious spread of main course with North Indian delicacies was served, beginning with bharwan vilayti gobi in hare tamatar makhni- stuffed broccoli in a green tomato sauce. Followed by gajar matar naal wadiyaan- carrots and peas cooked with urad dal dumplings, and bhatinde wale aloo – baby potatoes flavoured with kadhai spices and dried mango powder.

The most famous Amritsari dal, the slow-cooked lentil, was served along with matar wale chawal, a famous Punjabi side served to guests on all occasions. A regional staple, Hisar bajra khichdi from Harayana, a kind of porridge of pearl millet, lentils and vegetables, was also served to the president.

No Indian meal is complete without a variety of condiments, and the president was also delighted by the condiments from various regions of India, such as tukke da achar, pachranga achar, phool wadiyaan, papad, and sirke wali pyaz. For the breads: Masoor dal ki roti, pethi wali roti, chukandari chilgoza naan, and methi pudina paratha were served to everyone.
The meal concluded on a comforting sweet note with traditional desserts like bajra gud churma doda and saunfiya dona, alongside rich malai kulfi. One of the standout creations featured a millet and jaggery crumble layered over a delicately fennel-infused tart base, paired with creamy kulfi for a balanced blend of earthy and indulgent flavours.
Guests were also served ganne de ras di kheer with panjiri, a unique rice pudding prepared using fresh sugarcane juice and accompanied by wholesome wheat panjiri. Fresh seasonal fruits followed, along with warm servings of masala saffron chai, mint tea, and coffee.
The grand banquet was hosted at the Banquet Hall of Rashtrapati Bhavan, also referred to as the State Dining Room, which has the capacity to accommodate up to 104 guests.
