Tepache is a traditional Mexican fermented drink made from the peel and hard core of the pineapple. This drink is lightly fizzy and many people consider it a healthy alternative to soda. The special thing is that the same part of pineapple is used to make it, which people usually throw in the garbage.
How is Tepache drink made?
To make tepache, pineapple peels are fermented for a few days with water, jaggery and spices. During this process, natural gas is formed in it, due to which the drink becomes slightly fizzy and refreshing. Its taste is slightly sweet, sour and very refreshing.

- Peel and core 1 pineapple
- 2 liter water
- 1 cup jaggery
- 1 cinnamon stick
How to make tepache at home

Add water, jaggery, cinnamon and pineapple peels to a large glass jar.
Step 3
Cover the jar and keep it at room temperature for 2 to 3 days.
Step 4
When light fizz and small bubbles start appearing in it, then filter it, cool it in the refrigerator and serve.
Why is tepache beneficial for gut health?
An enzyme called bromelain is found in pineapple, which helps in improving digestion. Due to the fermentation process, good bacteria develop in this drink, which are considered beneficial for gut health. Drinking tepache instead of heavy and sugary drinks in summer can make the body feel light and refreshed.
Keep these important things in mind while making tepache
- Always use glass jars.
- Do not keep the jar in direct sunlight.
- If bubbles start appearing after 2-3 days, then the drink is ready.
- Fermenting for a longer time may result in a more sour taste.
