- Curry leaves
- Asafoetida (Hing)

How to Prepare Spicy Rasam:
1. First, Prepare the Base
Pour the tamarind extract into a deep vessel. Now, add the chopped tomatoes, turmeric, and salt. Cook this mixture over medium heat until the tomatoes have softened completely. This forms the base of the Rasam.

2. Now, Add the Spices
Once the tomatoes have become soft, add the Rasam powder, crushed garlic, and the black pepper-cumin powder. Now, add 2 to 3 cups of water; if you prefer your Rasam to be slightly thinner in consistency, you may add a little extra water.

3. Allow it to Come to a Gentle Simmer
Rasam should not be cooked over high heat for an extended period. Cook it over a low flame, and as soon as a light froth begins to appear on the surface, reduce the heat. Excessive boiling can diminish its authentic flavor.

4. The *Tadka* (Tempering) Brings the Flavor to Life
Heat a little oil in a small pan. Add the mustard seeds. Once the mustard seeds begin to splutter, add the dried red chilies, curry leaves, and a pinch of asafoetida. Pour this prepared tempering directly into the Rasam. The moment the tempering is added, its aroma will fill the entire house.

5. How to Serve
Garnish the prepared Rasam with fresh coriander leaves and serve it piping hot alongside steamed rice. If you wish, you can also serve it with *papad* (crisps) or fried potato chips on the side.
