Use full fat milk

If you want the paneer to be very soft, then use full cream or buffalo milk.

Do not add lemon to boiling milk immediately

While churning the milk, turn off the gas and add lemon or vinegar only after it cools down slightly.

Mix lemon or vinegar in water

Instead of adding it directly, dissolve it in water first, this improves the texture of the paneer.
