  • 2 medium sized potatoes
  • 1 onion (finely chopped)
  • 1 tomato (chopped)
  • 1 green chilli
  • 1 teaspoon cumin
  • ½ tsp turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • salt as per taste
  • 2 tbsp ghee or oil
  • 2 cups water
  • Coriander to garnish

How to make delicious UP style tahari

First of all, wash the rice with clean water and soak it for about 10 minutes. This will cook the rice quickly and the grains will be separate.

Now heat ghee or oil in a pressure cooker. Add cumin seeds in it and crackle it and then add finely chopped onion and fry it till it turns golden. After this add tomatoes and green chillies and let the masala cook well.

When the masala is ready, add chopped potatoes and fry for a few minutes. Now add turmeric, red chilli, coriander powder and salt and stir well so that the taste of the spices gets absorbed into the potatoes.

Drain the water from the soaked rice, put it in the cooker and mix it gently with the spices. After this add 2 cups of water and close the lid of the cooker.

Cook on medium flame for 2 whistles. Turn off the gas and let the pressure of the cooker release on its own.

correct way to serve

After opening the cooker, expand the tahari slowly so that the rice does not break. Top with fresh coriander and serve hot with curd, boondi raita, papad or mango pickle.

If you want to further enhance the taste of tahari, you can also add vegetables like peas, carrots or cauliflower to it. This will make this dish more nutritious and tasty.
