Summer Delicious Raita Recipes: Smoky Flavored Cucumber Raita

Material
- 250 grams curd
- 2 medium sized cucumbers
- 1/2 tsp red chilli powder
- salt as per taste
- 1/2 tsp chaat masala
- 1/4 tsp sugar
- 1 tsp cumin
- 2 pinch asafoetida
- 1 tbsp mustard oil
- Coriander to garnish
Method
- First of all, grate cucumber and mix it in curd.
- Add cucumber, salt, red chilli powder, chaat masala, sugar and some chopped coriander to the beaten curd and mix well.
- Now heat mustard oil in a small pan for tempering. Add asafoetida and cumin seeds and fry till crackling.
- Immediately add this tadka to the raita so that the smokey flavor remains inside.
- After about 30 seconds, remove the lid, mix the raita and serve.
Beetroot Cucumber Raita

Material
- 1 medium boiled and peeled beetroot
- 1/2 cucumber grated
- salt as per taste
- 1 tsp cumin
- 2 tbsp mint and coriander finely chopped
- 3/4 cup thick curd
- 2 tbsp pomegranate seeds
Method
- Grind boiled beetroot and make a smooth paste.
- Lightly fry the cumin seeds in a pan, cool it and grind it coarsely.
- Mix beetroot paste, grated cucumber and salt in a bowl.
- Now add mint, green coriander and curd and mix well.
- Finally add roasted cumin seeds and garnish with pomegranate seeds and serve chilled.

Cucumber Raita

- Boiled Moong Dal
- Grapes, pomegranate seeds and banana slices (as desired)
