Ingredients for Ragi Idli

  • 1 cup Ragi (Nachni) flour
  • 1 cup semolina
  • 1/2 cup curd
  • Salt to taste
  • Water as needed
  • A little oil to coat the moulds

To prepare ragi idli, first of all add ragi flour, semolina and curd in a large bowl and mix well. Then add water as needed and make a smooth batter like idli batter. Keep this mixture covered for about 15 to 20 minutes, so that the rava and ragi ferment properly. Once the mixture is ready, add salt to taste and mix again gently. Meanwhile, keep the idli molds ready with little oil. Now pour the prepared batter into these moulds. Heat water in an idli vessel, place the molds in it and let it steam for 12 to 15 minutes on medium flame. After the idlyas are fully cooked, turn off the heat and let them cool for a few minutes. Then take out the idlya separately from the mold with the help of a spoon. Serve hot ragi idlis with coconut chutney, tomato chutney or sambar.

Special tips

If you want softer idlis, you can add a little ino or baking soda to the mixture.
You can add finely chopped coriander, grated carrot or green chilli to the batter to enhance the taste.
To check if the idlis are cooked or not, insert a toothpick into them.
Idli tastes better if fresh curd is used.
