Crab dish is made by stir-frying glass noodles and crab meat. Sea crab is preferred, with the meat extracted after steaming.
The noodles and crab are cooked with a mix of mushrooms, carrots, and bean sprouts. All the ingredients are brought together with a dressing of lime juice, garlic, sugar, and fish sauce. Once finished, scallions and cilantro are added before serving.
In HCMC, one can try this dish at restaurants like Thuy 94 Cu (The Old Thuy 94) at 84 Dinh Tien Hoang Street in Saigon Ward.
Topping the list is China’s tangbao, a soup-filled dumpling. It is followed by gejang, marinated crabs from South Korea, and she-crab soup from the U.S., a creamy soup named for its use of female crabs.
