On World Chocolate Day 2026, there’s no better excuse to slow down, savour every spoonful, and celebrate one of the world’s most loved ingredients in all its delicious forms.
Whether you’re an experienced home baker or someone looking to try a café-style dessert for the first time, these chef-crafted recipes bring restaurant-quality indulgence straight to your kitchen. Featuring premium dark chocolate paired with vibrant berries, creamy hazelnut, and refreshing citrus, each dessert is designed to balance bold flavours with elegant textures.
Citrus ÉclatPreparation Time: 40 minutes (plus 4 hours chilling)
Serves: 4-6
IngredientsFor the Single-Origin Chocolate Crémeux
- 250 g 70% single-origin dark chocolate, finely chopped
- 250 ml fresh cream
- 125 ml whole milk
- 4 egg yolks
- 40 g caster sugar
For the Grand Orange Confit
- 3 large oranges
- 150 g sugar
- 150 ml water
- 20 ml Grand Marnier (optional)

Preparation Time: 45 minutes (plus chilling time)

For the Chocolate Dome
- 80 g dark couverture chocolate
For the Surprise Filling
- 15 g toffee pieces, chopped
- 1 Ferrero Rocher
- 10 g candied pecans, roughly chopped
- 5 g chocolate crisp pearls
For the Hot Chocolate Caramel Sauce
- 30 g sugar
- 10 ml water
- 50 ml fresh cream, warmed
- 10 g unsalted butter
- 20 g dark chocolate (70%), chopped
- 5 g cocoa powder
- A pinch of sea salt
- 2-3 drops vanilla extract
For Garnishing
- Chocolate ice cream
- Fresh strawberry
- Caramelised pecans (optional)
- Chocolate crumbs (optional)
- Edible gold leaf (optional)
Method to prepare:
- Temper the chocolate by melting the dark couverture chocolate until smooth and glossy.
- Make the dome by coating a 7-8 cm silicone half-sphere mould with a thin layer of chocolate.
- Refrigerate for 10 minutes, then apply a second coat and chill until firm.
- Unmould the shells carefully. Lightly warm the edges of both halves and join them together to form a hollow chocolate dome.
- Prepare the filling by placing a Ferrero Rocher in the centre of a serving plate.
- Add the crunch by scattering the chopped toffee pieces, candied pecans, and chocolate crisp pearls around the Ferrero Rocher.
- Cover the filling by gently placing the chocolate dome over it, completely hiding the surprise inside.
- Make the caramel by heating the sugar and water until they turn a deep amber colour.
- Carefully whisk in the warm fresh cream.
- Finish the sauce by stirring in the butter, dark chocolate, cocoa powder, sea salt, and vanilla extract until smooth and glossy.
- Assemble the dessert by garnishing the plate with caramelised pecans, chocolate crumbs or edible gold leaf, and placing a scoop of chocolate ice cream and a fresh strawberry alongside the dome.
- Create the magic by slowly pouring 100-120 ml of the warm chocolate caramel sauce over the dome.
- Watch the chocolate shell melt to reveal the Ferrero Rocher, crunchy toffee, candied pecans, and chocolate pearls hidden inside. Serve immediately.

- ½ cup almond flour
- 2 tbsp unsweetened cocoa powder, plus extra for coating
