Material

  • 2 cups wheat flour
  • 1 cup finely chopped spinach
  • 2 tablespoons curd
  • 1 tsp ginger-garlic-green chili paste
  • 1/2 tsp turmeric
  • 1 tsp red chillies
  • 1 tsp coriander-cumin powder
  • 1/2 tsp cumin seeds
  • A pinch of asafoetida
    1 tsp sesame seeds (optional)
  • 1 tablespoon of oil
  • Salt to taste
  • Water as needed
  • Oil or ghee for frying

  • In a large bowl, mix together wheat flour, turmeric, red chillies, coriander-cumin powder, cumin, hing, sesame seeds and salt.
  • Add finely chopped spinach, curd, ginger-garlic-green chilli paste and oil to it and combine all the ingredients.
  • Knead a soft and elastic dough adding little water as required. Cover the dough for 10 to 15 minutes.
  • Make equal sized balls of dough and gently roll each ball into a thin round or triangular patty.
  • Fry thepala on hot pan from both sides. Apply some oil or ghee on top and fry till golden spots.
  • Prepare all the thepals in the same way and keep aside to serve hot.
  • Serve the palak thepa with yogurt, pickles, green chutney or hot tea. This dish is equally delicious on the go or in a can.
