According to Harvard Health, potatoes contain very high amounts of carbohydrates, which our body digests very quickly. Due to this, the blood sugar and insulin of our body increases significantly and suddenly falls. If we understand technically then the Glycemic Index (GI) rank of root vegetables is very high.
GI is a rating system for ‘food containing carbohydrates’ that tells you how quickly a food affects your blood sugar (glucose) levels. The faster food breaks down into blood glucose, the greater the impact on blood sugar levels. This can trigger the risk of type-2 diabetes in the body.

According to experts, long-term continuous consumption of potatoes or anything containing fast-digesting carbohydrates can increase the risk of obesity, diabetes and heart disease. Researchers are already expressing concern about the problem of weight gain in people.
A research on this has also been published in ‘The New England Journal of Medicine’ in which the diet and lifestyle of 1 lakh 20 thousand people were monitored for about 20 years. Actually, researchers were concerned about how with the passage of time, small food items have increased problems like weight gain or obesity.
Researchers found that French fries, baked or mashed potatoes made people gain weight more quickly. Apart from this, people who have reduced the use of these things in their diet have gained less weight. These people have increased the quantity of other green vegetables in their diet.
Harvard Medical School has looked at three big studies conducted on 1 lakh 87 thousand men and women in America regarding this. In this, researchers compared people who consumed one serving of baked, mashed or boiled potatoes, chips or crisps a month with those who consumed four or more servings a week.
Researchers found that people who consumed four or more servings of baked, mashed or boiled potatoes a week had an 11 percent higher risk of high blood pressure than others. Whereas the risk of high blood pressure among those who consumed French fries (chips) was 17 percent higher than those who consumed one serving a month.
Victoria Taylor, senior dietitian at the British Heart Foundation, said in relation to this study, ‘Such a study can only tell about an association, not about cause or effect. Therefore, we cannot say that potato causes high blood pressure.
