A substantial outbreak of Cyclospora, associated with shredded iceberg lettuce, has impacted thousands across the United States, marking one of the largest incidents in recent history. Dr. Gerardo "Jerry" Lopez, an associate professor specializing in food safety and environmental microbiology at the University of Arizona, reports that the number of confirmed cases has exceeded 6,000, breaking previous records. "This is the highest we've seen since we began monitoring Cyclospora closely," Dr. Lopez stated. "Previously, the highest count was around 4,000 cases. Currently, we are approaching 6,000 to 7,000 cases, and we still have about six weeks of potential reports to come." The outbreak has been traced back to imported shredded iceberg lettuce supplied to a restaurant chain operating in five states. Although the outbreak is primarily affecting the US, Dr. Lopez's food safety recommendations are applicable to anyone handling fresh produce at home. Cyclospora is caused by the parasite Cyclospora cayetanensis, which is transmitted through contaminated food and water.
"Humans contract the infection by consuming fresh produce tainted with human feces," Dr. Lopez elaborated.
Seven Tips to Reduce Your Risk
1. Wash All Fresh Produce
The most crucial step in preventing cyclosporiasis is washing your produce thoroughly. Dr. Lopez emphasizes, "It's essential to wash your leafy greens, berries, and other fruits and vegetables. A quick rinse is better than nothing, but taking extra time to wash them properly can help eliminate contaminants from the surface."
2. Maintain a Clean Kitchen
Washing fruits and vegetables is just one part of the equation. If they come into contact with unclean surfaces afterward, they can become contaminated again. Dr. Lopez advises, "Ensure that you are not recontaminating what you just washed. Clean your counters and sinks, wash your leafy greens, and place them on a clean surface, like a paper towel." Good kitchen hygiene is vital in preventing foodborne illnesses.
3. Discard Bruised Produce
Even a slightly bruised tomato or damaged lettuce leaf can be problematic, as it may allow harmful microorganisms to enter. Dr. Lopez recommends, "Remove any damaged or bruised parts of your fruits and vegetables, as they can facilitate the intrusion of foodborne pathogens. If produce appears spoiled or damaged, it's often safer to trim the affected areas or discard it entirely."
4. Avoid Bleach and Detergents
Many individuals believe that washing produce with soap, bleach, or specialized cleaning solutions provides extra protection. However, Dr. Lopez warns that this is unnecessary and could be harmful. "Using bleach and detergents is not needed and can leave harmful residues on your fresh produce," he explains.
5. Be Cautious with Packaged Shredded Produce
While pre-cut fruits and vegetables offer convenience, they may pose a higher risk during outbreaks linked to processed items. Dr. Lopez suggests, "For those in the restaurant industry and at home, it may be wise to avoid packaged products right now due to the increased risk. Once produce reaches a processing facility, it is chopped and washed in batches, which can lead to contamination spreading across multiple packages if one batch is tainted."
6. Cook Produce When Possible
Not all fruits and vegetables can be cooked, but when feasible, heating them provides an additional layer of safety. Dr. Lopez advises, "Cooking your fruits and vegetables to 158 degrees Fahrenheit (70 degrees Celsius) is the best way to minimize risk."
7. Seek Medical Attention for Persistent Symptoms
Cyclospora infections often result in watery diarrhea, nausea, fatigue, and stomach cramps. While many gastrointestinal issues resolve on their own, Dr. Lopez emphasizes that persistent symptoms should prompt a visit to a healthcare provider. "If watery diarrhea lasts more than a couple of days, medical attention is necessary for testing and appropriate treatment," he cautions, noting that Cyclospora is a parasitic infection requiring different treatment than viral stomach bugs.
