Ingredients
- 1 cup basmati rice (cooked or soaked)
- ½ cup gram flour (besan)
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 1 onion, finely sliced
- 1 tomato, chopped
- 2 green chilies, chopped
- 1 teaspoon ginger-garlic paste
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- Salt to taste
- 2 tablespoons chopped coriander leaves
- 2 cups water (if using soaked rice)
How to Make Desi Besan Pulao
Step 1: Roast the Besan
Heat a pan and dry roast the gram flour over low heat for 4–5 minutes until it turns aromatic and lightly golden. Keep stirring continuously to prevent burning, then transfer it to a bowl.
Step 2: Prepare the Masala
Heat ghee or oil in the same pan. Add cumin seeds and let them splutter. Add sliced onions and sauté until golden brown.
Mix in the ginger-garlic paste and green chilies. Cook for a minute before adding chopped tomatoes. Cook until the tomatoes become soft.
Step 3: Add the Spices
Add turmeric, red chili powder, coriander powder, garam masala, and salt. Mix well.
Now stir in the roasted besan slowly, ensuring it blends evenly with the masala without forming lumps.
Step 4: Cook the Rice
Add soaked rice and gently mix it with the besan mixture. Pour in the required amount of water, cover the pan, and cook on low heat until the rice is tender and all the water has been absorbed.
If using pre-cooked rice, simply mix it into the besan masala and cook for 3–4 minutes on low heat.
Step 5: Garnish and Serve
Sprinkle freshly chopped coriander leaves on top and fluff the pulao gently with a fork.
Serve hot with:
- Plain curd or boondi raita
- Mango or lemon pickle
- Roasted papad
- Fresh salad
