Kutu Atta Puri for Sawan Somwar: The month of Sawan holds great significance for devotees of Lord Shiva, particularly on Mondays when many observe the 'Sawan Somwar' fast. During this time, individuals often consume *falahari* meals, which are suitable for fasting. Among the various options, *puris* made from *Kutu* flour (buckwheat flour) are a favored choice. These *puris* pair wonderfully with a potato curry (*aloo ki sabzi*), offering a delightful and energizing meal. If you're looking to prepare something special for this Sawan Monday, crispy yet soft *Kutu* flour *puris* are an excellent option.



Ingredients for Kutu Puri:
2 cups *Kutu* flour (buckwheat flour)
2 medium-sized boiled potatoes
2 green chilies (finely chopped)
1 tablespoon finely chopped fresh coriander leaves
1 teaspoon rock salt (*sendha namak*) or to taste
½ teaspoon cumin seeds
½ teaspoon black pepper powder
Pure ghee or refined oil for frying


Preparation Method:
Begin by thoroughly mashing the boiled potatoes. In a large mixing bowl, combine the *Kutu* flour, mashed potatoes, green chilies, coriander leaves, cumin seeds, black pepper powder, and rock salt; mix everything well. Gradually add water to knead a firm dough, keeping in mind that *Kutu* flour lacks gluten, so avoid making the dough too soft. Next, divide the dough into small balls. Lightly grease a plastic sheet or butter paper with ghee, and roll each ball into a *puri* shape using your hands or a rolling pin.


In the meantime, heat ghee or oil in a deep pan (*kadhai*). Once the oil is hot, fry the *puris* one at a time until they are golden brown and crispy on both sides. Repeat this process for all the *puris*.


Serving Suggestions:
Serve the hot Kuttu *puris* alongside *Vrat-special* potato curry, yogurt, peanut chutney, or *Vrat-friendly* green chutney. This meal is not only delicious but also provides lasting energy.
