Ingredients for Tandoori Sauce

Ingredients: 1 teaspoon mustard oil, 3 tomatoes, 2 onions, 1 inch ginger, 10-12 garlic cloves, 3 coriander leaves, 3 Kashmiri red chilies, salt, and water as needed.

Ingredients for Tempering: 1 tablespoon oil, 2 teaspoons red chili powder, 1/2 teaspoon turmeric powder, a pinch of black salt, a pinch of roasted fenugreek powder, a pinch of garam masala, and the juice of 1/2 lemon.

Method for Tandoori Sauce

Grease a pan with mustard oil and add tomatoes, onions, ginger, garlic, coriander leaves, Kashmiri red chilies, and salt. Cook until soft and brown. Once cooked, transfer the ingredients to a blender and grind them finely.

Now, add red chili powder and turmeric to a pan with oil and stir. Once cooked, add the blended sauce and mix well. The sauce should have a thick texture, so don’t add too much water. Once the sauce is cooked, add black salt, fenugreek powder, and garam masala. Finally, add lemon juice and stir well.

How to Make Rice with Paneer

Pour oil into a pan and then add the paneer pieces. Cook until golden brown on one side. Once browned, cut them into slices on a chopping board and set them aside.

To make the rice, heat the remaining oil in the same pan. Add the bell peppers and onions. Cook over high heat. Then, add the cooked basmati rice, salt, and fresh coriander. Mix well. Finally, add the lemon juice and stir. Your rice is ready.

Prepare the Bowl

To prepare the bowl, first add a layer of rice, then a generous layer of sauce. Add another layer of rice, drizzle with more sauce, and top with diced cheese. You can also garnish the bowl with fresh cilantro and lemon.
