Ingredients for cashew nut masala

  • 1 cup – Cashews
  • 2 to 3 tomatoes
  • 1 teaspoon ginger-garlic paste
  • 1 to 2 green chilies
  • 18 to 20 cashew powder
  • 1 teaspoon red chili powder
  • ½ teaspoon garam masala
  • 1 teaspoon kasuri fenugreek
  • 2 tablespoons cream
  • Bay leaf
  • 2 to 3 tablespoons butter or ghee
  • Salt
  • Water

How to make Dhaba style cashew nut masala

First of all, heat 1 tbsp of butter or ghee in a pan. Add cashews to it and roast them on low flame till they turn light golden brown. Be careful not to burn the cashews. Remove the roasted cashews to a plate. Add some butter in the same pan and fry the bay leaves and chopped tomatoes. Once the tomatoes are soft, make a fine puree of them. Now heat the butter in the pan and fry the ginger-garlic paste. Add fine cashew powder to it and fry on low flame for some time. Then add tomato puree, red chilli powder, green chillies and a little water. Once the gravy boils well, add the roasted cashews and salt and mix. Let it cook for a few minutes. Then add garam masala, kasuri methi and cream and mix well. After this, let the gravy cook on low flame for a minute or two and switch off the flame. Your delicious dhaba style cashew masala is ready.

Keep these things in mind while making cashew nut masala

Always roast cashews on low heat, so they don’t burn.

If you want the gravy to be creamier, you can slightly increase the amount of cashew powder.

Adding the cream at the end gives the gravy a nicer texture.

After adding all the spices, let the vegetables cook on low heat for a few minutes to get a dhaba-like flavor.

Serve this vegetable hot with naan, roti, tandoori roti, paratha or cumin rice.
