Step 1: In a blender, combine cottage cheese (paneer) or soy chunks soaked in warm water. We’re using paneer here. Add 1 large green chili, 3 garlic cloves, a ginger piece less than half an inch long, cumin seeds, and a pinch of turmeric to the paneer. Add a little black pepper and 1 tablespoon of yogurt, and blend to a smooth paste.
Step Two: Add about 1 tablespoon of gram flour to this paste. The batter should thicken after thoroughly mixing the flour. Now, add your favorite vegetables, such as chopped onions, bell peppers, tomatoes, corn, and some yellow bell peppers. Add oregano and chili flakes and finish the mixture.
Step 3: Now, take a pan-baked sandwich maker. Lightly butter it and spread the prepared batter. Top with vegetables and cheese slices. Spread a little green chutney on top of the cheese. Pour some more batter on top, close the sandwich maker, and bake on both sides. Bake until crispy.
