Chole Bhature and Chole Puri are the pride of Punjabi food, be it a wedding or any festival, Chole is always made in homes. The taste of Punjabi Chole is often not available when prepared at home. Punjabi Chole Recipe
First step- To make Punjabi Chole, you have to take white Kabuli gram i.e. thick chickpeas. Now wash the chickpeas with water 1-2 times and soak it for 8 hours. Now put chickpeas in the cooker and add enough water to submerge them well. Along with this, add some spices as per your taste. Cook the chickpeas on medium low flame for 3-4 whistles.
Second step- To make the masala, you have to take 3 medium sized onions and make a fine paste of them. Make paste of 2 tomatoes and add some garlic, green chilli and ginger to it. Prepare tomato by making a fine paste.
Third step- Now take only iron pan, you can also use cast iron. This will give a wonderful rustic flavor and rustic color to the chickpeas. Add mustard oil in it and as soon as the oil gets hot, add tempering of cumin, celery and asafoetida to it. Now first of all add onion paste and fry it well. When the onion turns colour, add tomato paste to it.
Fourth step- Now add spices to it. You have to add turmeric, coriander powder and Kashmiri red chilli powder for colour. Add some water to it and cook the spices thoroughly. When the spices are roasted, add boiled chickpeas along with all the water to it. If chickpeas seem thick then add some hot water to it.
Fifth step- Cook the chickpeas with spices for 5 to 10 minutes and now add the chickpea masala to it. This will give a different aroma to the chickpeas. You have to add 1 tsp chole masala. Meanwhile, crush 7-8 chickpea grains, this will thicken the chickpeas.
Now, to bring Punjabi flavor to the chickpeas, put ghee or butter in a pan and add lengthwise chopped ginger slices and long chopped green chillies and pour this tempering over the chickpeas. Delicious Punjabi Chole is ready. Add finely chopped coriander to it and serve.
