This Poha, which has become the identity of Indore, Madhya Pradesh, looks very special due to its mild-sweet taste, onion, green coriander, lemon and sev sprinkled on top. This is the reason why crowds of people are seen at Poha shops in the streets of Indore early in the morning. The special thing is that making Indori Poha does not take much time or much effort. It can be prepared in about 10 minutes with some common ingredients present at home. Be it children or adults, people of almost all age groups like the taste of Poha. If you are bored of eating parathas or sandwiches every day, then you can definitely try Indori Poha for breakfast.

What is the specialty of Indori Poha?

The taste of Indori Poha is slightly different as compared to normal Poha. It has mild sweetness along with the taste of spices, sourness of lemon and freshness of onion and coriander. Its taste is further enhanced by adding sev, pomegranate seeds or finely chopped onion. Poha is generally considered a light breakfast and is eaten in the morning as an easily digestible option. However, its nutritional value also depends on how much oil, salt and toppings it is prepared with.

Ingredients for making Indori Poha

  • Poha – 2 cups
  • Onion – 1
  • Green chilli – 3-4
  • Green Coriander – 3-4 tbsp
  • Pomegranate seeds – 1/2 cup
  • Mustard – 1 tsp
  • Fennel – 1 tsp
  • Turmeric – 1/2 tsp
  • Coriander seeds – 1 tsp
  • Sugar – 1 tsp
  • Curry leaves – 10-15
  • Peas – 1/2 cup
  • Asafoetida – 1 pinch
  • Lemon – 1
  • Sev – 1/4 cup
  • Oil – 2 tbsp
  • Salt – as per taste

Method to make Indori Poha

step 1- To make flavourful Indori style poha, first take the poha and wash it thoroughly with water 2 to 3 times. Then place the soaked poha on a sieve and let the water drain. Meanwhile, finely chop onion, green chilli and green coriander.

Step 2- Now take a pan, add oil in it and heat it on medium flame. When the oil becomes hot, add mustard seeds, coriander seeds, fennel seeds, asafoetida and crackle. After frying the spices for a few seconds, add curry leaves.

Step 3- After this, add finely chopped onion (save some for garnish) and fry it until its color turns light pink. Meanwhile, place the poha in a sieve, add sugar, turmeric powder and salt as per taste and mix well with hands or with the help of a ladle.

Step 4- Now put the poha in the pan with spices and mix it well with all the spices. After this, cover the pan and let the poha cook for some time. During this time, keep stirring the poha in between so that the poha does not stick to the bottom of the pan. Sprinkle some water on the poha so that it remains soft. After this turn off the gas.

Step 5- Now let the poha remain covered for 2 more minutes. Indori Poha is ready. Put it in a serving plate and garnish it with onion, green coriander, pomegranate seeds and fine sev and serve.
