Material

  • Gram flour: 2 cups
  • Water: 2 cups (to prepare the batter)
  • Sugar: 2 cups
  • Cardamom powder: ½ tsp
  • Saffron or orange food color: 2-3 drops
  • Magaj/chopped pistachios: 2 tbsp
  • Desi ghee or oil: for frying

step 1

Sieve the gram flour in a large vessel. Now prepare a thin and lump-free solution by adding water little by little. The solution should neither be too thick nor too thin. Add 1 drop of orange color to it and mix it well.

Step 2
Heat desi ghee or oil in a pan on medium-high flame. Now place a strainer with fine holes over the pan and pour the gram flour batter on it. The batter will automatically fall into the pan and form small droplets. Fry the boondi for only 10-15 seconds, do not let it become too crispy or hard. Then take it out and keep it in a plate.

Step 3
Mix sugar and 1 cup water in another pan and heat it. Add cardamom powder and remaining orange color to it. 1- Turn off the gas just before the syrup is formed.

Step 4
Add fried boondi and magaj seeds to the prepared hot syrup. Mix it well, cover it and leave it for 20-30 minutes so that the boondi absorbs the syrup completely. When the mixture becomes lukewarm, apply some ghee on your hands and make round Motichoor laddus. Garnish with pistachio shavings on top. Enjoy it on the occasion of 15th August.
