How to make Paneer Lachcha Paratha

Prepare the dough like this
Take wheat flour in a big vessel and add some salt and celery to it. Now slowly add water and knead a soft dough. Finally, apply some ghee and smoothen the dough. Cover it and let it rest for about 15 to 20 minutes. This will make the dough easier to roll and the layers of paratha will also be better.

Prepare delicious cheese filling
Grate the cheese thoroughly in a bowl. Add finely chopped onion, green chilli, coriander leaves, red chilli, garam masala, dry mango powder and some salt. Mix everything well. There should not be any water in the filling, otherwise the mixture may come out while filling the paratha.

Make Lachcha like this and fill it with Paneer
Now take a ball of dough and roll it a little. Apply light ghee on top and sprinkle dry flour. Now fold it like a fan and make a long strip. Pull this strip lightly and turn it round and then set it like a ball. This trick will help in making beautiful lachcha in paratha.

Now roll the prepared dough lightly and place the cheese filling in the middle. Close the ends and roll again slowly. Do not apply too much pressure, otherwise the filling may come out.

Bake it on the pan like this
Put the paratha on the hot pan and let it cook lightly on one side. Then turn it over and apply some ghee on top. Bake until golden and crisp on both sides. Apply ghee on the edges as per requirement. While baking, by pressing lightly with a spatula, the layers open well and the paratha becomes more crispy.
