  • Makhana: 2 cups
  • Desi Ghee: 1 tsp
  • Boiled Potato: 1 (cut into small pieces)
  • Onion: 1 (finely chopped)
  • Tomato: 1 (finely chopped, seeded)
  • Green chilli: 1 (finely chopped)
  • Green chutney (coriander-mint): 1 to 2 teaspoons
  • Sweet chutney (tamarind): 1 teaspoon
  • Roasted cumin powder: 1/2 tsp
  • Chaat masala: 1/2 tsp
  • Black salt: as per taste
  • Pomegranate seeds: 2 tbsp
  • Coriander: finely chopped
  • Peanuts or Sev: 2 tbsp

method of making

  1. First of all it is important to crisp the makhana. For this, heat 1 teaspoon desi ghee in a heavy bottom pan. Fry the makhanas on low flame while stirring continuously for 5-7 minutes. When the makhana breaks easily with a crunch when plucked with hands, then understand that it is roasted. Remove it from the flame and let it cool down a bit.
  2. Now take a big mixing bowl. Add finely chopped onion, tomato, boiled potato and green chilli. After this add chaat masala, roasted cumin powder and black salt. Now add green chutney and sweet tamarind chutney and mix all the ingredients well.
  3. Keep in mind that roasted makhanas are added only at the end, so that their crunch remains. Just before serving, add the makhanas to the bowl and toss gently.
  4. Take out the prepared bhel in a plate. Garnish with fresh coriander, pomegranate seeds and if desired, some roasted peanuts or finely chopped sev. Your crispy, spicy and nutritious Makhana Bhel is ready. Serve it immediately, as the makhana may become soft if kept for too long.
