If you want to try something new in samosas, then this time try making Lucknowi round samosas instead of triangular samosas. Apart from being spicy, its taste also looks slightly royal due to the cashew nuts and raisins added in the filling. The most important thing is that no special equipment is required to make it at home. Simply prepare the dough, make the spicy filling, shape into a potli and fry on low flame until golden.
Ingredients for making round samosa

- Wheat flour – 1½ cups
- Fine semolina – ½ cup
- Salt- as per taste
- Celery – ½ tsp
- Desi ghee or oil – ¼ cup
- Water- as per need

- Large boiled potatoes – 4
- Boiled green peas – 1 cup
- Cashew nuts – as per requirement
- Raisins- as per requirement
- Coriander – finely chopped

coarse masala
- Fennel- 1 tsp
- Whole coriander – 1 tsp
- Cumin – ½ tsp
- Green chilli – 2 to 3
- Dry red chilli – 2 to 3
- Ginger- 1 inch
- Lemon juice- 1 tablespoon

- Asafoetida- 1 pinch
- Kashmiri red chilli – ½ tsp
- Turmeric- ½ tsp
- Cumin powder- ½ tsp
- Coriander powder- 1 tsp
- Black salt- as per taste
- Common salt- as per taste
- Dry mango powder- as per taste
How to make Lucknowi Gol Samosa?
First prepare the dough
Mix wheat flour, semolina, salt and celery in a large vessel. Now add ghee or oil to it and mix well with hands. Knead a stiff dough by adding water little by little. Cover the dough and keep it aside for about 10 to 15 minutes, so that it sets well.
Prepare spicy filling
To make coarse masala, add fennel, whole coriander, cumin, green chilli, dry red chilli, ginger and lemon juice in the mixer jar. Grind it coarsely without adding water. Now heat some oil in the pan. Add asafoetida and prepared coarse masala and fry for some time. After this add turmeric, Kashmiri red chilli, cumin powder, coriander powder, salt and dry mango powder.
Now add mashed potatoes and boiled peas and mix well. Finally add cashews, raisins and green coriander. After mixing everything, turn off the gas and let the filling cool down.

Now make small balls of the prepared dough. Roll out a ball and cut it into two parts. Now place potato-pea filling in the middle of one portion. Slowly gather the edges upwards and give it a round shape like a bundle. Seal the edges by pressing them well, so that the filling does not come out while frying.
fry on low flame
Heat oil in a pan and fry the samosas on low to medium flame. Frying them hastily on high flame can result in the outer layer becoming golden quickly, while the inner part will not be properly crispy. Fry the samosas slowly, turning them until they become golden and crisp. Take out the prepared round samosas in a plate. If you want a less oil option, you can also bake them in the oven or prepare them in the air fryer.

Serve hot round samosas with green chutney and sweet tamarind chutney. Its taste increases even more with tea. If you want to eat something different, then break the samosa from the middle and add whipped curd, green chutney, sweet tamarind chutney, finely chopped onion and green coriander on it. It can also be served like Lucknowi style samosa chaat by sprinkling some chaat masala on top.
