Cheese-Stuffed Chicken Cutlets with Mustard Sauce
If you love chicken cordon bleu but want something a little simpler and quicker, these cheese-stuffed chicken cutlets are a delicious alternative. Thin chicken cutlets are filled with melty Havarti cheese, coated in crisp breadcrumbs and pan-fried until golden. A creamy, tangy mustard sauce brings everything together.

Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts or thin chicken cutlets
- 4–6 ounces Havarti cheese, sliced
- 1 cup all-purpose flour
- 2 large eggs
- 1½ cups breadcrumbs
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt, to taste
- Freshly ground black pepper
- 3 tablespoons vegetable oil or olive oil
- 1 tablespoon butter
For the Mustard Sauce
- 1 tablespoon butter
- 1 small shallot, finely chopped
- 1 cup chicken stock
- ½ cup heavy cream
- 2 tablespoons Dijon mustard
- 1 teaspoon whole-grain mustard
- 1 teaspoon lemon juice
- Salt and black pepper, to taste
- 1 tablespoon chopped fresh parsley
How to Make Cheese-Stuffed Chicken Cutlets
1. Prepare the Chicken
If using chicken breasts, carefully slice each one horizontally to create thinner cutlets.
Place the chicken between two sheets of plastic wrap or parchment paper and gently pound it until evenly thin. Don’t pound it so aggressively that holes form in the meat.
Season both sides with salt, pepper, garlic powder and paprika.
2. Add the Cheese
Place slices of Havarti cheese in the centre of each chicken cutlet.
Fold the chicken over the cheese, pressing the edges firmly together to create a sealed pocket.
If necessary, secure the edges with a couple of toothpicks. This helps prevent the cheese from escaping while cooking.
3. Set Up the Breading
Place the flour in one shallow bowl.
Beat the eggs in a second bowl.
Combine the breadcrumbs with a little salt, pepper and paprika in a third bowl.
Coat each stuffed chicken cutlet first in flour, then egg and finally breadcrumbs. Press the crumbs gently onto the chicken so they adhere properly.
4. Cook the Chicken
Heat the oil and butter in a large skillet over medium heat.
Carefully place the breaded chicken into the hot pan. Cook for approximately 4–5 minutes per side, depending on thickness, until the coating is deeply golden and the chicken is cooked through.
The chicken should reach an internal temperature of 165°F (74°C) at the thickest part.
Transfer the cooked chicken to a plate and let it rest while you prepare the sauce.
Make the Mustard Sauce
5. Sauté the Shallot
Melt butter in the same skillet over medium heat.
Add the chopped shallot and cook for 1–2 minutes until softened.
6. Build the Sauce
Pour in the chicken stock and scrape up the flavorful browned bits from the bottom of the pan.
Allow the stock to simmer for a few minutes.
Add the cream, Dijon mustard and whole-grain mustard. Stir well and simmer gently until the sauce thickens slightly.
Finish with lemon juice, salt and black pepper.
7. Serve
Place the crispy chicken cutlets on plates and spoon the warm mustard sauce around or over them.
Garnish with fresh parsley.
The creamy sauce works especially well with the crunchy coating and melted cheese inside the chicken.

Rest before serving: Allow the chicken to rest for a few minutes after cooking so the melted cheese doesn’t immediately spill out when you cut into it.
