  • 2 boiled potatoes
  • 1/2 cup finely chopped carrots
  • 1/2 cup finely chopped beans
  • 1/2 cup peas
  • 1/2 cup finely chopped cabbage
  • 1 small onion finely chopped
  • 2 green chillies finely chopped
  • 1 tsp ginger-garlic paste
  • 1/2 tsp garam masala
  • 1/2 tsp red chillies
  • 1/2 tsp cumin seeds
  • 1/2 tsp chaat masala
  • 2 tablespoons of coriander
  • 3 to 4 tablespoons of breadcrumbs
  • 2 tablespoons cornflour
  • Salt to taste
  • Oil for shallow frying

  • Carrots, beans, peas and cabbage can be lightly steamed or cooked in a little water. Be careful not to completely soften the vegetables to drain the excess water.
  • Mash the boiled potatoes well in a large bowl. Add cooked vegetables, finely chopped onion, green chillies and ginger-garlic paste to it.
  • Add garam masala, red chilli, cumin, chaat masala, coriander and salt and mix all the ingredients together.
  • Add breadcrumbs and cornflour to the mixture. Mix all the ingredients together to form a thick mixture. If the mixture seems too loose you can add some more breadcrumbs.
  • Make balls of the same size of the prepared mixture and shape them into round or oblong kebabs by pressing lightly with your hands.
  • Heat some oil in a pan and keep the kebabs on medium heat. Shallow fry gently until golden and crispy on both sides. Be careful not to break the kebabs while flipping.
  • Remove the prepared Veg Kebab in a plate and serve hot. Serve with green chutney, tomato sauce or curd-mint dip to enhance the taste.
