People like the food of Mathura Vrindavan very much. Kachori, Bedmi Puri, Samosas, Lassi and Peda are very famous here. But one vegetable is also eaten with great fondness here which is called Gadd ki Sabzi. People like to eat gadd ki sabzi with puri at weddings, bhandaras or other functions. The taste of this vegetable is so amazing that even paneer seems pale in comparison to it. You can also call it mixed veg which is prepared in Lutpute style. Gadd Ki Sabzi Recipe
First step- To make this vegetable, you need 2-3 potatoes, 3-4 tomatoes, 2-3 small brinjals, 250 grams pumpkin, 1 small cauliflower, 1 capsicum, 2 radishes, 4 parwal, 1 carrot, 1 green chilli, 1 inch piece of ginger and 1 bundle of spinach. You can also add any other vegetable of your choice in it.
Second step- Now its tadka brings real flavor to it. Temper the Gadd vegetable with Pach Foran. Panchforan is easily available in the market but if you don’t have it then you can temper the oil by just mixing cumin, mustard, fennel, fenugreek and celery at home. To enhance the taste of the vegetable, you can add spices like cloves, black pepper, bay leaves and dry red chillies to it.
Third step- If you cook the vegetable in mustard oil, it will taste better. You can increase or decrease the quantity of oil as per your convenience. While the oil is heating, wash all the vegetables and cut them into medium sized pieces. You can also cook the vegetable in a cooker. Place the cooker on gas and add asafoetida, curry leaves, panchphoran and dry spices into it.
Fourth step- Now add turmeric, red chilli powder, coriander powder, Kashmiri red chilli powder to the oil. Cut ginger pieces and green chillies and fry them. When the spices are roasted, add all the vegetables. Now stir the vegetables and mix them well with the spices. Add salt as per taste to the vegetable and add 1 cup of water and cover the cooker with lid.
Fifth step- You do not have to close the lid of the cooker and keep stirring the vegetables in between. Now when the vegetable becomes soft, mash it lightly and cook for some time without covering the cooker. When the vegetable is ready, add garam masala to it and add chopped coriander while serving. The delicious Gadd vegetable is ready. Gadd vegetable can be eaten with puri or paratha.
