Make spicy dum aloo like hotel at home, the gravy will be amazing in this way

The specialty of Dum Aloo is its balance of gravy and spices. When prepared properly, the potatoes remain slightly crispy on the outside and soft on the inside, while the spicy gravy gets absorbed well into the potatoes. It can be served with roti, naan, paratha or jeera rice. Let us know the easy way to make hotel-like spicy Dum Aloo at home.

Ingredients to make Dum Aloo

  • Small potatoes – 500 grams
  • Onion – 2 finely chopped
  • Tomato – 2-3
  • Ginger-garlic paste – 1 tbsp
  • Curd – 3 tbsp
  • Oil – as per need
  • Cumin – 1/2 tsp
  • Bay leaf – 1
  • Red chilli powder – 1 tsp
  • Turmeric – 1/2 tsp
  • Coriander powder – 1 tsp
  • Garam masala – 1/2 tsp
  • Kashmiri red chilli – 1 tsp
  • Kasoori Methi – 1 tsp
  • Salt – as per taste
  • Coriander – to garnish

Prepare Hotel Style Dum Aloo like this

Boil and prepare potatoes
First of all, wash small potatoes thoroughly and boil them. Keep in mind that the potatoes should not melt completely. After they cool down, remove their peels and make light holes with the help of a fork or toothpick. Due to this, the gravy of spices reaches inside the potatoes well.

Give light crispy texture to potatoes
Heat some oil in a pan and add potatoes and fry lightly on medium flame until golden. Do not fry them too much. When the outer surface of the potatoes becomes slightly crispy, take them out in a plate and keep them aside.

Prepare spicy gravy
Now add oil as per requirement in the same pan. Add cumin seeds and bay leaves and temper it. Then add finely chopped onion and fry until it turns golden. After this add ginger-garlic paste and cook till the raw smell goes away.

Add tomato puree and fry it well. Now add turmeric, coriander powder, red chilli and Kashmiri red chilli. Cook the spices until oil starts separating from the sides. This step plays an important role in enhancing the taste of Dum Aloo gravy.

Be careful while adding curd
Lower the flame and add whipped curd little by little. Keep stirring it continuously so that the curd does not curdle. After the masala is cooked well, decide the consistency of the gravy by adding water as per requirement.

Now give us the real taste
Add fried potatoes to the gravy and mix well. Cover the pan and cook on low flame for about 8-10 minutes. During this time the potatoes will absorb the flavors of the spices well. Finally add garam masala and a little kasoori methi. Add finely chopped coriander on top and turn off the gas.
