Reduce the sourness by adding a little sweetness

Finally, applying a new tadka to the curry can also improve its taste. Heat some oil or ghee in a pan and add cumin seeds, mustard seeds, curry leaves and dry red chillies. If you want, you can also add a pinch of asafoetida. Add the prepared tadka to the hot curry and keep it covered for a few minutes. The aroma of the spices and the flavor of the tadka will help balance the overly sour taste.
If the curry becomes too sour then the most important thing is not to increase the quantity of any one thing too much suddenly. It is better to add sugar, gram flour, salt or spices in small quantities and taste every time. In this way, the taste of the curry can be easily rebalanced without wasting it.
