Chefs across the country all said the same thing: ditch the granules and start from scratch. Michelin-starred chef Mark Poynton says pan and roasting juices are the essential base, adding that “good stock and roasting juices always make gravy delicious”. Sean Blood, head chef at ROAM, says patience is just as important: “You can’t cheat flavour. Gravy needs to be slowly reduced,” giving time and collagen the chance to build “depth, richness, and complexity” and that naturally glossy finish.
Start with a hot roasting tin, scrape up every caramelised bit and let the base thicken before adding the one ingredient chefs all agree on: umami.
Chef Jack Stein recommends four storecupboard staples: “a dash of soy sauce and Marmite, cider vinegar and mirin” to give traditional gravy a deep, rounded flavour. He says it works with any Sunday roast and is “perfect on sausages and mash.”
Mark Hearthstone, chef proprietor of La Fosse at Cranborne, goes for “dried fungi” instead, which adds an earthy, woodland depth to game, beef and mushroom gravies.
Umami is a savoury taste that comes from glutamates such as monosodium glutamate (MSG), which is found naturally in mushrooms. But if you don’t have any to hand, the answer is probably already in your cupboard.
Matt Fletcher of Great Central Pub swears by Worcestershire sauce: “It really opens the flavours and adds a full-bodied punch of flavour.” Just a small splash is enough. Bear in mind it is classed as an ultra-processed food, so those who prefer natural ingredients may want to skip it.
A touch of acidity can lift your gravy even further. Chefs suggest a splash of balsamic vinegar, apple cider or white wine, but add any of these carefully so they don’t overpower the sauce.
Finally, Dean Harper of Harper Fine Dining says the last step makes all the difference: “A knob of butter” whisked in right at the end gives “a silky smooth texture and delicious buttery taste.” It adds richness without hiding the savoury flavour, but keep it to a small amount or the gravy can turn greasy.
