While making brinjal bharta at home, the most important thing is to roast the brinjal in the right way. The better the brinjal is roasted from inside, the more wonderful the smoky aroma will be in the bharta. Ingredients to make Brinjal Bharta
For this, take a big big brinjal, 1-2 onions, 2-3 ripe tomatoes, 2 green chillies, a little ginger, garlic, green coriander, oil, cumin, turmeric, red chilli, coriander powder, garam masala and salt as per taste. A little mustard oil can also be used to make the taste more Dhaba-like.
Prepare brinjal by roasting it like this
First of all, wash the brinjal and dry it thoroughly. Now apply a little oil on it and fry it from all sides on direct gas flame. Keep turning it occasionally so that the brinjal cooks evenly. When the peel starts blackening and the brinjal becomes completely soft, turn off the gas.
Let the roasted brinjal cool for some time. After this, remove the burnt peel and mash the brinjal well. While roasting brinjal, if any seeds seem too hard or spoiled then remove them.
Now prepare spicy tadka
Heat some oil in a pan. Add cumin seeds in it and crackle it. After this, add finely chopped onion and fry until it turns golden. Now add ginger, garlic and green chillies and cook for some time. Then add finely chopped tomatoes and fry until the tomatoes become soft and start releasing oil.
Now add turmeric, coriander powder, red chilli and salt as per taste. It is very important to fry the spices well. This will increase both the taste and aroma of the bharta.

Once the spices are roasted well, add mashed roasted brinjal to it. Mix everything well and cook for a few minutes on medium flame. Finally add some garam masala and finely chopped coriander. If you want, add a little mustard oil on top and mix. This can give the bharta the taste and aroma of a desi dhaba.
One trick will give you rich smokey flavor
If you do not want to fry brinjal on direct gas flame at home, then it can also be cooked in oven or air fryer. However, to get the smoky taste like dhaba, letting the roasted brinjal smell on open flame for a few minutes can make a special difference. Serve the prepared bharta with hot roti, bajra roti, paratha or rice. Adding green coriander and some onion on top and serving it also makes it look amazing.
