To make it, batter is prepared from semolina, curd and some spices, which is cooked in steam for just a few minutes. After this, the rolls are made even more delicious by adding mustard seeds and curry leaves. If spicy roasted tomato and garlic chutney is added along with it, then its taste increases even more. First prepare semolina batter
In a mixer jar, add 1 cup semolina, 2 teaspoons wheat flour, salt as per taste, some finely chopped ginger, green chilli and garlic. Now add half a cup of curd and about 1 cup of water and grind it well.
Keep in mind that the batter should not be too thick or thin. Keep it smooth and slightly runny consistency. Once the batter is ready, take it out in a bowl.
Add these things in the batter
Now add finely chopped coriander and some chilli flakes to the prepared batter. Mix everything well.
After this, take a steel flat plate and apply some oil on it and grease it well. Due to this, the batter will not stick to the plate and it will be easy to make rolls after cooking.
Steam in just 5 minutes
Put some water in a pan or a big vessel and heat it. Now spread a thin and even layer of batter in a greased plate. Carefully place the plate over the hot water and cover with a lid.
Cook it on medium flame Steam for 5 minutes Do it. When the batter is cooked well, turn off the gas and take out the plate. Let it cool for some time.
Now make soft rolls
When the semolina layer cools down a bit, cut it into long and equal strips with the help of a knife. Now lift each strip from one edge and roll it slowly.

Apply tadka of mustard-curry leaves
Now heat 1 to 2 spoons of oil in a pan. Add mustard seeds in it and let it crackle. After this add fresh curry leaves and fry for a few seconds.
Now add prepared semolina rolls to it and toss it gently, so that the taste of tadka gets mixed well in all the rolls. Add some green coriander on top and turn off the gas.
Roasted tomato and garlic chutney will double the taste
To make spicy chutney with semolina rolls, first lightly fry tomatoes and a few cloves of garlic on the pan. When the tomatoes become a little soft and lightly roasted, put them in a mixer or on a grater.
Now add Kashmiri red chilli, green chilli, some cumin and salt as per taste and grind it coarsely. Add some water as per requirement. Finally add finely chopped onion and green coriander and mix the chutney well.
Must try for breakfast
Now place hot semolina rolls in a plate and serve prepared roasted tomato-garlic chutney along with it. This recipe for morning breakfast can prove to be good in terms of both taste and ease. The special thing is that it does not require much oil to make it and due to steam, it can be a lighter option than the usual fried breakfast.
