How to make Stuffed Capsicum
First prepare capsicum
Wash capsicum thoroughly and dry it with a clean cloth. Now cut off the upper stem part and remove the seeds inside. Keep in mind that do not cut the capsicum completely, so that the stuffing can be filled in it easily. Keep the prepared capsicum aside.
Prepare spicy stuffing like this
Mash the boiled potatoes well. Add grated cheese, finely chopped onion and green chillies to it. Now add coriander powder, turmeric, red chilli, garam masala, dry mango powder and salt.
Heat some oil in a pan and add cumin seeds. After this add gram flour and fry for a few minutes on low flame. When the aroma of gram flour starts appearing, add the potato-cheese mixture into it. Mix everything well and cook for 3-4 minutes. Finally add green coriander and turn off the gas.
Stuffing capsicum like this
Now let the prepared stuffing cool down a bit. After this, fill the spicy mixture thoroughly inside all the capsicum one by one. Do not fill the stuffing by pressing it too much, rather fill it with a light hand so that it does not come out while cooking.
It is important to cook on low flame
Heat some oil in a wide pan and place the stuffed capsicum in it. Cover the pan and cook on low to medium flame. Carefully rotate the capsicum every few minutes, so that it gets cooked properly from all sides. In about 15-20 minutes the capsicum will become slightly soft and golden from outside.
If you like a slightly crunchy taste then cook on high flame without lid for 2-3 minutes. This will give a light roasted taste to the capsicum.
serve hot
Take out the prepared stuffed capsicum in a plate and sprinkle green coriander on top. It can be served with hot roti, paratha, naan or dal-rice. If you want, keep green chutney and curd along with it.
