With the help of some easy things at home, you can prepare thick and tasty lassi. Its specialty is that the quantity of milk is kept less in it, due to which the lassi does not become too thin. Adding cream, dry fruits and saffron on top further enhances its taste.

Ingredients for Mathura Style Lassi

  • Cold and thick curd – 1 cup
  • Sugar – 5 spoons
  • Cream – 3 spoons
  • Cold milk – 3 tbsp
  • Cardamom powder – half teaspoon
  • Almonds and pistachios – as per requirement
  • Saffron – a few threads

Prepare thick lassi like this

First of all, take well cooled thick curd in a big vessel. Add sugar and cream in it and beat it well with the help of a churner or hand blender. Try to ensure that there are no lumps of curd in the mixture and the texture becomes completely smooth.

Now add cold milk little by little and keep mixing continuously. One thing to be kept in mind here is that the quantity of milk should not be too much. Adding too much milk can make the lassi thin and reduce its creamy texture.

After this add cardamom powder and beat well once again. Your thick and creamy lassi is ready.

Decorate with cream and dry fruits on top

Pour the lassi into a glass or kulhad. Place a spoonful of cream on it. Then add finely chopped almonds-pistachios and some saffron threads and serve it.

If you want to make it more rich, you can also put a thick layer of cream on top. This will make the lassi look attractive and every sip will taste creamy.

The fun of Mathura style lassi can be further enhanced in an earthen kulhar. Pour cold lassi into the kulhad and garnish with cream, dry fruits and saffron. Enjoying this Lassi while sitting with the family on weekends can be a very desi and special experience.

If you do not like very sweet lassi then you can reduce the amount of sugar as per your taste. At the same time, the quantity of cardamom and saffron can also be kept as per choice.
