How to Make Restaurant-Style Golden Fried Prawns at Home?
Crispy on the outside, juicy on the inside and beautifully golden, fried prawns are a restaurant favourite that you can easily recreate in your own kitchen. The secret is in the marinade, the coating and maintaining the right oil temperature.
Follow this simple recipe to make perfectly crunchy golden fried prawns at home.
Ingredients
For the Prawns
- 500 g prawns, cleaned and deveined
- 1 tablespoon lemon juice
- 1 teaspoon ginger-garlic paste
- ½ teaspoon turmeric powder
- 1 teaspoon red chilli powder
- ½ teaspoon black pepper powder
- Salt, to taste
For the Crispy Coating
- ½ cup all-purpose flour (maida)
- ½ cup cornflour
- 1 egg
- ½ teaspoon red chilli powder
- ½ teaspoon black pepper
- Salt, to taste
- ½ teaspoon baking powder
- Cold water, as needed
- Breadcrumbs, optional, for extra crunch
- Oil, for deep frying
Step 1: Marinate the Prawns
Add the cleaned prawns to a bowl. Mix in lemon juice, ginger-garlic paste, turmeric, chilli powder, black pepper and salt.
Coat the prawns thoroughly and leave them to marinate for 20–30 minutes. This allows the flavours to penetrate the prawns while keeping the preparation quick.
Step 2: Prepare the Crispy Batter
In another bowl, combine maida, cornflour, baking powder, chilli powder, black pepper and salt.
Add the egg and gradually whisk in cold water until you have a thick but smooth batter. It should cling to the prawns rather than run off.
For an especially crunchy restaurant-style crust, you can also keep some breadcrumbs ready for the final coating.
Step 3: Coat the Prawns
Dip each marinated prawn into the batter, making sure it is completely covered.
If you’re using breadcrumbs, roll the battered prawn gently in breadcrumbs until evenly coated.
Step 4: Fry Until Golden
Heat oil in a deep pan over medium-high heat. The oil should be hot enough that the coating starts sizzling immediately, but it shouldn’t be smoking.
Carefully add the prawns in small batches. Avoid overcrowding the pan, as this can lower the oil temperature and make the coating greasy.
Fry until the prawns turn crisp and golden brown, usually taking just a few minutes depending on their size.
Remove them with a slotted spoon and place them on a wire rack or paper towel to drain excess oil.
The Secret to Extra-Crispy Fried Prawns
For that distinctive restaurant crunch, cornflour is the key. It helps create a lighter, crispier coating than using flour alone. Using cold water in the batter and frying in properly heated oil can also help produce a crisp exterior.
Most importantly, don’t overcook the prawns. They can quickly become rubbery if left in hot oil for too long.
How to Serve
Serve the golden fried prawns immediately with mint chutney, chilli-garlic sauce, tartar sauce or a squeeze of fresh lemon. Garnish with sliced onions and coriander for a restaurant-style presentation.
The result is a plate of crunchy, golden prawns with a juicy centre—perfect as a starter, party snack or seafood appetiser.
