Material
Ragi flour-1 cup
Semolina-½ cup
Curd-½ cup
Water-½–¾ cup
Ginger-green chilli paste – 1 tsp
Turmeric-½ tsp
Salt- as per taste
Eno/Fruit Salt-1 tsp
Lemon juice-1 tsp

for tempering
Oil-1 tablespoon
Mustard-½ tsp
Sesame seeds – 1 tsp
Curry leaves-8–10
Green chillies – 2 cut lengthwise
Method
1-Add ragi flour, semolina, curd, salt, turmeric and ginger-green chilli paste in a vessel. Prepare a thick but easily flowing batter by adding water little by little. Keep it covered for 15–20 minutes.
2- Keep the water hot in the steamer and grease the Dhokla plate by applying light oil.
3-Now add lemon juice and eno to the batter and mix gently in one direction. The batter will start rising. Immediately pour the batter into the plate and steam on medium flame for 15–20 minutes.
4- Check by inserting a knife or toothpick – if it comes out clean, Dhokla is ready. For tempering, heat oil and add mustard seeds, sesame seeds, curry leaves and green chillies. Pour this tadka over the dhokla. Cut the dhokla into pieces and serve with green chutney or curd.
