Leftover rice from the night often remains lying in the fridge. Sometimes I don’t understand what to do with them. Often people make fried rice or parathas from them, but if you want to make something light, healthy and very tasty, then you can make soft and spongy idlis from the leftover rice. It is very easy to make and gets ready in minutes and its taste is so amazing that people in the house will ask for it. here its Recipe Given, take note.
Material
- Leftover rice: 1 cup
- Semolina (Rava): 1 cup
- Curd: 1/2 cup (fresh or light sour)
- Water: As required (to make batter)
- Eno or baking soda: 1 tsp
- Salt: as per taste
- Oil: for applying in idli mold
for tempering
- Mustard: 1/2 tsp
- Curry leaves: 8-10
- Green chilli: 1-2 (finely chopped)
- Coriander: finely chopped
method of making
step 1: First of all, add 1 cup leftover rice and 1/2 cup curd in the mixer jar. Add a little water and grind it very smooth and fine.
Step 2: Now take out this ground rice mixture in a big bowl. Add 1 cup semolina and salt as per taste and mix well. If the batter seems too thick, add some water.
Step 3: Cover this solution and keep it for 10 to 15 minutes so that the semolina absorbs the water and swells properly.
Step 4: Heat 1 teaspoon oil in a small pan. Prepare tadka of mustard seeds, curry leaves and green chillies in it. Mix this tempering and finely chopped green coriander in the batter. This adds South Indian flavor to Idli.
Step 5: When you are about to make idli, add 1 teaspoon eno to the batter and add 1 teaspoon water on top and mix gently. The batter will become fluffy and light immediately.
Step 6: Grease the idli molds with a little oil. Fill the batter in the molds with the help of a spoon. Heat water in an idli steamer or cooker, place the idli stand and steam on medium flame for 10 to 12 minutes. Then serve it with chutney.
