Til, or sesame seeds, have been cherished in India for centuries, especially during the winter months. Ingredients:

1 cup white or black sesame seeds (til)

½ cup jaggery, grated or powdered

1 tablespoon ghee (optional, for richness)

¼ teaspoon cardamom powder (optional, for flavor)

Method:

# Roast the sesame seeds:


Heat a pan on medium flame.

Add the sesame seeds and dry roast them until they turn light golden and start giving a nutty aroma.

Keep stirring continuously to avoid burning.

# Melt the jaggery:

In another pan, add jaggery with 2–3 tablespoons of water.

Heat it on low flame until it melts completely and forms a slightly sticky syrup.

# Combine sesame seeds and jaggery:

Add the roasted sesame seeds to the melted jaggery.

Mix quickly and evenly so that all seeds are coated.

Add cardamom powder and ghee, if using, and mix well.

# Set the mixture:

Grease a plate or tray with ghee.

Pour the mixture onto the plate and flatten it evenly using a spatula.

Let it cool slightly and cut it into squares or diamond shapes.

# Cool & store:


Once completely cooled, store in an airtight container.
