As awareness of healthy living grows among young people and the international community in Vietnam, demand for nutritious food options is rising. Responding to this trend, Soumaki, a healthy restaurant chain based in Ho Chi Minh City, offers a “build-your-own bowl” concept featuring slow-cooked ingredients using the sous-vide method. According to Zavadlav et al. (2020), published on PMC (U.S. National Library of Medicine), sous-vide cooking retains up to 90% of the nutrients and natural flavors compared to conventional methods.

Instead of a fixed menu, Soumaki allows diners to customize their meals from over 60 ingredients, selecting from protein options like chicken, beef, and salmon, along with fresh vegetables, quality starches, and signature handcrafted sauces. This flexibility enables customers to tailor dishes to their preferences and nutritional goals, such as low-calorie, high-protein, balanced, or vegan diets.

A key aspect of Soumaki’s offering is the combination of advanced international cooking techniques, including sous-vide, with a focus on local flavor profiles. The culinary team has developed a range of exclusive sauces designed to appeal to local tastes while maintaining the brand’s commitment to clean eating.

The restaurant interiors feature a minimalist design with natural materials, soft lighting, and indoor plants, creating a comfortable environment. The self-service counter helps reduce waiting times, catering to the fast-paced schedules of office workers and the expatriate community. Soumaki currently operates three branches in District 1, District 7, and Thao Dien areas with significant foreign resident populations.

According to a Soumaki representative, the primary customers include young professionals, health-conscious individuals, and expatriates living in Vietnam.

“Most customers seek a quick meal solution that is both nutritious and flavorful,” said Viet Anh Tran, Soumaki’s CEO and founder.

Soumaki’s cooking process excludes oil, additives, and refined sugar, instead emphasizing the natural flavors of ingredients. The sous-vide technique results in tender, moist proteins. Meals are packaged for dine-in or takeaway, accommodating busy lifestyles.
