Ingredients:
- Drumsticks (Moringa pods) – 250 gm (cut into pieces)
- Garlic – 8–10 cloves
- Green chilies – 4–5
- Salt – to taste
- Coriander seeds – 2 tbsp
- Peanuts – 2 tbsp
- Cumin seeds – 1 tsp
- Fennel seeds – 1 tbsp
- Mustard seeds – 1 tbsp
- Fenugreek seeds – 1 tsp
- Mustard oil – ½ cup
- Asafoetida – a pinch
- Red chili powder – 1 tbsp
- Turmeric powder – ½ tsp
- Vinegar – 2 tbsp
Step-by-Step Method:
Step 1: Wash and chop the drumsticks into small pieces. Boil lightly until tender, then drain and let them dry completely.
Step 2: Dry roast peanuts, coriander seeds, cumin, fennel, mustard, and fenugreek seeds until aromatic. Cool and grind coarsely.
Step 3: Heat mustard oil until it smokes. Add asafoetida, garlic, and green chilies. Sauté lightly.
Step 4: Add the ground spice mix, turmeric, and red chili powder. Cook for 1–2 minutes.
Step 5: Add drumstick pieces and salt. Mix well. Turn off the heat and stir in vinegar.
Step 6: Transfer to a clean, dry jar. Keep in sunlight for 3–4 days to mature. Then enjoy!
Serving Tips:
Pair it with hot rotis, parathas, or even dal-chawal. It’s also perfect for travel or lunchboxes.
