Ingredients:

For the gatte (dumplings):

For the curry:

  • 2 tsp ghee

  • ½ tsp asafoetida (hing)

  • 1 tsp cumin seeds

  • 2 Whole Red Chilies

  • 1 cup finly chopped onion

  • 2 finly chopped green chilies

  • 1 tbsp ginger-garlic paste

  • ½ tsp coriander powder

  • 1 cup whisked yogurt

  • Fresh Coriander for Garnish

Instructions:

  1. Prepare the gatte:

    • In a bowl, mix beesan, turmeric, red chili powder, carom seeds, ghee and salt

    • Add yogurt and knead into firm dough (Add water if needed)

    • Roll Into Cylindrical Shapes (About ½ Inch Thick)

  2. Cook the gatte:

    • Boil water in a pan and gently add the gatte

    • Cook for 8-10 Minutes Until they Float to the Surface

    • Remove, Cool and Cut INTO 1-Inch Pieces

  3. Make the curry:

    • Heat Ghee in A Kadhai, Add Cumin, Asafoetida and Whole Red Chilies

    • Sauté onions Until Golden Brown

    • Add green chilies and ginger-garlic paste, cook for 1 minute

    • Add turmeric, red chili powder, coriander powder and salt

    • Reduce heat and slowly add whisked yogurt while stirring continuously

  4. Final Assembly:

    • Add the gatte pieces and simmer for 5 minutes

    • Garnish with fresh coriander

    • Serve hot with bajra roti or steamed rice

Chef’s tips:

  • Mantain low heat when adding yogurt to prevent curdling

  • The gatte dout should be firm but dry

  • For Richer Flavor, Use Homemade Yogurt
