You must have heard or eaten Besan Gatte ki Sabzi till now, but try making this Lauki Gatte ki Sabzi once. This is a very tasty Rajasthani recipe. Its amazing taste will cast a spell on the heart and mind. Every member of the house, whether young or old, will be satisfied after eating it. They will like this vegetable so much that they will ask to make it again and again. We are telling you a very easy way to prepare it, which will not cause any problem at all.

Ingredients

For Gatte

600-gram bottle gourd

½ teaspoon cumin seeds

½ teaspoon black pepper

½ teaspoon coriander seeds

A pinch of carom seeds

½ teaspoon salt

½ teaspoon red chili powder

1 teaspoon kasuri methi

1 tablespoon oil

50 grams paneer

For making curry

2 tablespoons oil

½ teaspoon mustard seeds

10-12 curry leaves

1 tablespoon chopped ginger

1 tablespoon chopped garlic

1 teaspoon chopped green chilies

1 cup chopped onion

½ cup chopped tomatoes

1 cup curd

Salt to taste

½ teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder

Chopped coriander leaves

Method

- First of all, peel the bottle gourd and grate it. Place the grated bottle gourd in a muslin cloth and squeeze out all the water.

- Mix all the other ingredients and knead a hard dough. Sprinkle some gram flour on the board and roll the dough into 1-inch thick rolls.

- Cook the Gatte rolls in boiling water for 4-5 minutes till they harden. Remove them and let them cool completely.

- Heat oil in a pan. Add mustard seeds, ginger, garlic, green chillies, and curry leaves, and fry till they become aromatic.

- Now add onions and fry till they turn golden. Add salt and ground spices and mix well.

- Add tomatoes and fry on a low flame till the tomatoes become soft. Add squeezed bottle gourd water, beaten curd, and keep stirring continuously till the mixture starts boiling.

- Add ½ cup water and Gatte and cook on low flame for a few minutes. Garnish with chopped coriander leaves and serve with roti or rice.
