
Meghan Markle was inspired by her relationship with Prince Harry during a section of her Netflix show as she recreated a dish that is special to the couple. Meghan's Netflix show, With Love, Meghan, dropped its second season on the streaming service this morning, and fans have been eager to get a peek into the Duchess's life in California with Prince Harry. In each episode, she welcomes a guest with whom she cooks, bakes and crafts.
On the fourth episode of the second season, she welcomed celebrity chef Samin Nosrat, with whom she enjoyed a dish that was served at her wedding to Prince Harry in 2017. In fact, she loves the dish so much that she cooked it on the night they got engaged to each other. "This is a by-heart recipe", she revealed as she showed viewers how she makes her roast chicken. "It's a classic and it's nourishing, and I have done it so many times that now I can do it with my eyes closed," she jokes.
"I roasted a chicken the night my husband proposed to me. Roast chicken is what we served at our wedding. I make it at least once a week."
She continues: "When I made a roast chicken for my now-husband, I was still having a lot of challenges with the conversion of Celsius and Fahrenheit. I made a horrible chicken that night. I mean, truly terrible."
However, she says she has now mastered it and shows viewers her simple method for making roast chicken. She chops up celery, carrots, and onions and places them in a roasting dish. She then adds plenty of olive oil and a generous amount of salt and pepper. The chicken will sit on these veggies in the oven.
She sticks half a lemon, garlic and rosemary into the chicken. She also rubs some butter on it before placing it in the oven. She places it breast-side up and ties the legs together to help it cook more evenly.
The chicken goes into the oven at 425F, which is around 218C. She leaves it in there for an hour and says the oven door iows not to be opened during this time. The chicken then comes out golden and crispy.
"It's a tasty and just easy weeknight dinner," she says. "And even better, it's great for leftovers."
